Collegiate Cuisine: Mug Cake

    Your roommate leaves for that frat party and after a long week you just want to stay in and cuddle up with that left over halloween candy. Before you rip into those Reese’s Peanut Butter Cups, here’s a great homemade heart warming cake FOR ONE. No oven or baking pans needed. #SmallKitchenProblems

    First, here’s what you’ll need:

    1 coffee mug

    4 tablespoons of flour

    5 tablespoons of sugar

    1 egg

    3 teaspoons oil (vegetable or olive)

    3 teaspoons milk (I used soy)

    fillings (I used chocolate chips and nutella)

    Now are you ready for this extremely complicated process?

    Add the flour and sugar to your mug.

    Then add the egg, oil and milk.

    Finally add your fillings! I chose nutella and chocolate chips because I had them on hand, but you can add anything!

    Blueberries, strawberries, peanut butter, cinnamon, brown sugar, anything! You can also bake this without any additives, maybe a little vanilla and you’ll have a plain cake to drizzle with chocolate sauce or top with fresh fruit. Yum!

    Once you’re done adding all your ingredients, give it a stir with a fork or spoon to get everything incorporated. It should look like a regular cake batter when you’re finished.

    Turn off that oven! All you need to cook this personal pastry is a microwave! Cook on high for 3 minutes.

    You’ll see the cake rise over the mug as it cooks, but don’t worry that’s just right!

    And you’re all done! Let it cool for a few minutes, or until you’re tempted so much that you don’t mind burning the roof of your mouth.

    Now kick back, relax and enjoy that episode of SNL knowing that you baked a cake during the commercial break!
