Healthy Dinner on the Fly

    Okay, I’ll admit I love to cook. Having my own apartment inspires me to try new recipes and whip up a batch of cookies almost daily. And yes, I do get most of my ideas from Pinterest.

    You may not be like me though. You might HATE cooking. Or you may just not be good at it. But friends, I have a recipe that I am 100 percent confident you will be able to make, and best of all it is extremely healthy, cheap, and takes under 20 minutes. Intrigued?

    Here it is:

    Baked teriyaki salmon with a cinnamon sweet potato and stemed vegetables.

    Ingredients:

    1 boneless/skinless salmon filet ($1.50 at Pick ‘n Save)

    1 tbsp. olive oil

    1 tsp. pepper

    2 tsp. ground cinnamon

    1/2 tbsp. butter

    2 tbsp. Teriyaki sauce

    1 medium-sized sweet potato ($.99 )

    1 package of frozen vegetables of your choice ($2.99)

    Directions:

    1. Preheat over to 400 degrees

    2. Dredge salmon filet in olive oil and season with pepper. Place in middle rack of oven in a ceramic/glass baking dish and bake for 20 minutes, or until salmon is a light pink color and flakes with a fork.

    3. While salmon is in oven, microwave vegetables by adding two tablespoons of water into a microwavable bowl and microwave on high for 4 minutes.

    4. While vegetables are cooling, poke sweet potato with a fork (multiple times to allow ventilation) and place in microwave. Your microwave should have a “potato” button. Hit the potato button once and let the potato cook. You will know if the potato is baked through if it is tender.

    5. To flavor up the potato add butter and cinnamon.

    6. Remove salmon from oven and decorate with teriyaki sauce

    7. Place everything on a plate, sit down and enjoy!
