Laura’s Recipe of the Week: Goat Cheese Toasts

When you read “goat cheese toasts,” you probably didn’t think “breakfast.” Honestly, it is my favorite way to start the day. Plus, anyone can find time to make toast. If you can handle a little raw garlic in the morning, you can handle anything.

What you need:

2 pieces whole grain bread, toasted

1 clove garlic, peeled

2 Tbs. plain, soft goat cheese

1/2 tsp. extra virgin olive oil

Pinch of salt and pepper

Method:

1. Rub garlic on whole grain toast.

2. Spread each toast with 1 Tbs. goat cheese, drizzle with a little extra virgin olive oil.

3. Season with a dash of salt and pepper.

Yields one serving. Double, triple or quadruple as needed.
