Laura’s Recipe: Zucchini and Summer Squash Salad

Zucchini and Summer Squash Salad

This is a version of a salad I ate in Florence, Italy. It’s incredibly simple to make and costs a mere $1.40 for the entire recipe. Don’t be afraid of raw zucchini.

What you need:

1 small zucchini, about ¼ pound

1 small yellow summer squash, about ¼ pound

Extra virgin olive oil, to taste

Balsamic vinegar, to taste

Salt, pepper

Method:

1. Grate zucchini and summer squash on the smallest holes of a grater.

2. Toss the grated vegetables together and drizzle with ample amount of olive oil and balsamic vinegar. Season with salt and pepper as desired.

3. Serve immediately, as the liquid in the vegetables will begin to release as it sits.

Yields 1 large portion or two smaller ones.
